SPRING IS HERE
Now is the time to think about blossom wines, these delicate refreshing wines are easy to make with satisfying results.
Here is one for Elderflower champagne, low in alcohol, cloudy and fragrant.
To make one gallon:-
6 Elderflower sprays (more is too strong)
juice and rind of one lemon
2 tablespoons of cider vinegar
one and a half pounds of sugar
Method
Pare the outer rind from the lemon and squeeze the juice.
Stir the whole of the ingredients together in a sterile bucket with one gallon of water. Cover and leave for two days. Strain into plastic screw top bottles (lemonade type).
Keep in a cool place for two weeks when you will have a cloudy fizzy fragrant drink.
Drink on it's own or with ice and lemon.
