Apparently this is very good and pre- dates cider?
Apple Ale 4%
To make 1 gallon:
Malt extract syrup - 80z
Sugar - 60z
Apple juice - 1 pint
Cracked crystal malt grains - .1bZ
Lemon juice - Sml
Strong brewed tea - Sml Beer yeast
Water to one gallon.
Method -
Warm the malt extract by removing lid. Place in a part full pan of boiling water and wait till the malt has liquidised. Pour into bucket ,add apple juice, cracked malt grains, lemon juice, sugar and tea then the water and stir to mix thoroughly. When cooled to room temparature add yeast, loosely cover and leave to ferment in a warm place. After 5 days rack off into a barrel or clean bucket with loose cover. Leave to complete fermentation. Rack off into a clean bucket leaving the lees behind. Clear if neccessary and bottle.
